Hops with Citrus Flavor and Aroma

Hops with bright citrus aromas, such as grapefruit, lemon and orange, are designed to punch up IPAs, pale ales, hazies, or any style needing some zest — driven by natural compounds like myrcene and limonene. Citrus aroma can also develop through fermentation: through biotransformation, yeast convert hop compounds into other aroma compounds, such as geraniol becoming citronellol, which shows up as vibrant citrus and sweet fruit in the finished beer.
